蕃茄肉醬(義大利語:ragù alla bolognese、法語:sauce bolognaise),或音譯為波隆那肉醬,是發源於義大利波隆那,以肉為主原料,並搭配芳香食材(芹菜、洋蔥和胡蘿蔔)製作的醬,通常還會加入番茄,搭配義式麵食一起食用。ragù為義大利語肉醬的意思。
義式蕃茄肉醬[编辑]
1982年Accademia Italiana della Cucina(義大利料理學院)的波隆那代表所發行的食譜記載,材料局限使用牛肉、義式培根(pancetta)、洋蔥、胡蘿蔔、芹菜、蕃茄糊、肉燉清湯、紅酒、些許牛奶或鮮奶油。
另一種作法是,使用牛肉或小牛肉之外,和入絞碎豬肉或豬肉香腸、雞肉或鵝肉的肝臟,現今常另外加入黃油和橄欖油。
搭配麵食[编辑]
傳統上因為肉醬比較重,主要搭配寬麵、管麵、蝴蝶麵或貝殼麵,比較容易附著,但在義大利以外的地區通常是搭配義大利直麵。

In a pastadish, you'd betteruse cannedtomato, becauseithas a tangierand richerflavorthanfreshones.
Next, tomatopaste. Tomatopasteismadeby reducingtomatomoisturetomake a thickandrichconcentrate, andit's differentfromtomato sauce. Normallyitcomeswith a toothpastelike package.
Lastly, pasta. Today I am usinglinguine, a longandnarrowribbonlike pasta. Actuallyanotherwiderpasta, fettuccineis betterinthisdish.
Topick uptherightpasta, thoselookrough ratherthansmootharebetter, becausetheycanabsorbmoresauce.
First, slicebaconlengthwiseintostrips, andthencutintosmallpieces.
Remove theseedsfromchili, andthendice intosmallpieces.
Lastly, dice mushroomsaswell.
Asforbasil, I havealreadywashedanddrainedit. Remove thoselargeleaves, andthensavethose smallandyoungleavesforgarnishlater.
Rollthebasilleavesandthen cutintothinstrips. Chopthemup.
Addabout 3 to 4 tbs. of oliveoilin a pan, andaddin bacon.
Cookthemovermediumheat for 1 to 2 minutesuntilit's brownedandoily.
Press a cloveofgarlic in.
Cookfor a minuteortwo untiltheonionbecomestranslucent, addinmincedbeef.
Stirfrymincedbeef untiltheygetsomecolor, andthen addinallthevegetables, carrots, celerysticks, mushroom, basilleavesanddicedchili.
Cookfor 1 to 2 minutesuntilfragrant.
Pourinsomeredwine. Allow thealcoholtoevaporate.
Openup thecannedtomato, andgetitin thepan.
Pour 150mlofwater orbeefstockinthepan. Here I amusingthewatertoremovethose remainingtomatoesinthecan.
Press downandmashcannedtomatoeswithspatula, andthenaddintomatopaste.
Sprinklesomesalt, nottoomuch, because wehaveparmesancheeselater.
Add in a pieceofbayleaf.
Turn downtheheattolow, coverwith lid, andbraiseforaboutanhour.
Waituntilthemeatsauceis almostready, andthencookyourpasta.
Bring a potofwaterto a boil, andaddin a pinchofsalt. And thenaddinlinguine.
Cookover highheat, giveit a stiroccasionallyso thattheywon't stickatthebottom ofyourpan.
Thereisaninstructiononthebackofyourpasta packagetoshowyouhowmuchtime isneededtocookpasta. Mylinguine needs 10 minutes.
Whilepastais cooking, take a lookatthemeatsauce. Removethebayleafnow.
Use a gratertogratesomeparmesancheesein thesauce.
Giveit a tasteand adjustifneeded. Addinsomefreshly groundpepper.
Mixwell. Nowit's almostdone.
Sothepastahave beencookingforabout 9 andhalfminutes, 30 secondsawayfromfullycooked. Transferthem fromthepotintothesaucenow.
Atthispoint, addingpastainto thesaucewillhelptoreducethe mixture. Ifyoufeellikethesauce istoothick, youcanpourin somepastawaterinit.
When thesauceisreducedto a desiredconsistency, it's readytoserve. Beforethat, sprinklesomeyoungbasilleaves.
And someparmesancheeseaswell. Nowit's done.
Thispastawithtomatoand meatsauceis a classicandpopulardish.
Thereare a lotofingredientsinthemeatsauceapartfrommeetand tomato, whichgivesthedish a richcombination offlavors.
